HERE IS 2 METHODS TO DEFEATING RUBY WEAPON:
Method One
First, since you know he'll eventually eliminate two of the three Characters, it's best to have killed the other two members who you don't need as much before the combat starts to heat up (Note once his two "Arms" are in the ground behind you it is now safe to revive them). This prevents Ruby from getting Cloud, who has all the equipment to take Ruby on.
Our suggest equipment list:
Weapon: Enhance Sword/Ultimate Weapon
Use Enhance Sword if you want the several thousand AP the Ruby has available to improve your materia. Use the Ultimate Weapon if you want to get this over with as quickly as possible. Both have 8 linked slots, so it's six of one, half a dozen of the other in terms of magic capabilities.
Armor: 50% Evade & 60% MEvade means you have a pretty damn good chance of missing most hits. This armor also has 6 linked slots. You can find it at Midgar City (Disc 2) north of the Proud Clod & Northern Crater (Disc Three) on the right hand path.
Accessory: One of Ruby Weapon's fingers will do a 30 second Petrify attack, so this is useful. Get one by Morphing Master Tonberry (on left path of Northern Crater) if you don't already have one.

Final Attack (get from Battle Square, Special Battle)
Enemy Skill with the following Skills
Angelic Whisper - Found in Northern Crater. Take the right path. Eventually you'll run into scantily-clad woman (Pollen Salitus) who always casts charm on you. She has Angelic Whisper. You'll need Manipulate her to get it.
Big Guard - Gonga. You'll find "Beach Plugs" (squids) on the beaches nearby. You must Manipulate them to get them to use it on you.
White Wind - Junon/Fort Condor area. Look for green-white cactus looking guys (Zemlezett). Often, they appear alone. They a "Thunderbolt" attack which looks like a smoke cloud. Again, you'll need to Manipulate him to get that, too. Be sure to bring an Ether as well. One Thunderbolt reduces his MP below 34 (The casting cost of White Wind).
Normally, you'd want to link Phoenix to Final Attack, but since you want the others to remain dead & Fire heals the Ruby Weapon, Revive is better. Preferably you have a Master level Final Attack, so you'll have 5 "extra lives".
You're likely to use the Enemy Skill Materia more than Master Magic. Angelic Whisper just rocks. For 50MP, you fully heal (if you're a high enough level) &/or cast Life 2 on the Character. Big Guard casts Wall & Haste for 56 MP. White Wind is also useful. Some people prefer to use Regan &/or FullCure.
Also take a handful of Turbo Ethers/Elixirs. That MP draining Claw is annoying as hell.
Now, link Final Attack to Revive & link MP Absorb to Master Summon. Option: Equip enough HP to max you out (strongly recommended) &/or enough Magic Plus to get to 255 Magic Power (maximum).
Now Start battle (run the airship into his head sticking out of the ground). First, set up a Big Guard. Now just Defend & heal until he buries his claws. Now the boring part begins. W-Summon Knights of the Round. Target the first at his claws, the second at his body. The Claws will die, & you'll do about 70,000-100,000 points of damage to Ruby. Don't get too excited though - keep in mind he has 1,000,000 HP, so you'll need to do this about 10 or 11 times. So you get to watch Knights of the Round about 20 times. You'll gain 2400 MP from the claws & 1000 from the Ruby, so you'll be full. Ruby retaliates to Knights of the Round with Ultima, which does about 7000 damage if it hits (this is why you use Mystile: 60% MEvade rocks). If it hits & you don't die (you shouldn't) you'll have time to cast Angelic Whisper while Ruby retracts his claws. Now he usually casts Comet 2 a few times before burying his claws again. Ruby usually runs of MP on about the Sixth time you use Knights of the Round on him. After that, the battle is a breeze since he can no longer cast Ultima or Comet 2.

Method Two
This method is much less complicated, & only requires you to have a Gold Chocobo. It should work fairly well vs Emerald Weapon, too.
Materia:
Knights of the Round (level 2)
W-Summon
Mime
Options: Enough HP Plus to max you out. (strongly recommended). Link Mime to master Counter [Command] (strongly recommended). Enough Magic Plus to get to 255 Magic Power. Final Attack linked to Revive. Change Knights of the Round to Ultima (that's right you need 2 Ultimas). The rest of equipment (ie armour & weaponary) is the same.
This fight you'll need to get in aquick & cast Knights of the Round linked to W-Summon as soon as possible, letting your other two members Mime your action. Sit back, & watch the destruction. If you've taken the optional Materia formation, just cast Ultima for the same effect.
