If you are american, then your unit of measurement is cups. Unfortunately, I'm English, so the recepies on this page are not measured in cups.

CHOCOLATE LAYER CAKE

ingredients....
4oz self raising flour
4oz caster or granulated sugar
4oz soft unsalted butter, or soft margerine
2 tablespoons coco powder or drinking chocolate
2 medium, or large eggs

INGREDIENTS FOR ICING...
1 teaspoon either coco powder or coffe essence
4oz icing sugar
small amount of milk, or cream

METHOD
pre-heat oven to 350 degrees (gas mark 4). line a 7 inch cake tin with greased greaseproof paper.
In a large bowl, beat the butter or margerine untill it is light and fluffy. Then add in the sugar, and beat the mix untill it is similar to a cream (DO NOT WHISK IT!)When it resembles a cream, add in the eggs one at a time, mixing thouroghly between them. In a small bowl or cup, mix the 2 tablespoons of coco with a very small amount of water until it forms a spreadable paste. (If more water is needed, add it a very small amount at a time) mix the chocolate paste in at the same time as the flour. like this:

1/3 chocolate paste

1/3 chocolate paste

Then pour the brown mix into the greased cake tin, smooth, and put in the oven for about 30 mins. When it is light and springy to the touch, take it out, and leave to cool on a plate or a wire cooling rack. Meanwhile, make the icing. Put the butter in a largeish bowl and beat untill light and fluffy. Then add the icing sugar and squash the butter and sugar together. when it will no longer stick together, add a SMALL amount of milk or cream
and mix together while adding the coco powder. stirr until the icing is smooth and brown, and you like the taste. When the cake is completely cool, you can put on the icing. You can either cut the cake in half and have the icing as filling, or smooth out the icing on top.

If you are not a big fan of chocolate, you can make the cake without it, just leave out the coco, and add a small amount of vanilla essence to the cake mix.
