ENTERTAINMENT CHEESE BALLS

Serves: 16 to 20 servings

Ingredients :
2 cups (8 ounces) shredded cheddar cheese
1/2 (8 ounces) package softened cream cheese
Almond halves or chopped walnuts amount depends on the size and shape of your balls.

Variations:

1st Variation:

1/4 cup pineapple preserves
1/4 cup packed pumpkin
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
in addition to the first listed ingredients.

2nd variation:

1/4 cup orange marmalade
1/4 teaspoon allspice
1/4 cup mashed finely canned yams
1/8 teaspoon nutmeg
in addition to the first listed ingredients

Beat cheeses together, if doing the variation add in either the pumpkin or the yams and add in the spices in a medium size bowl. Mix until smooth and then cover.
Refrigerate for 2 to 3 hours or until firm enough to shape.

Variations of shapes:
A pumpkin (suggested for the pumpkin mixture)
A Orange (suggested for the yam mixture)
A pinecone (suggested for the original mixture)
Or just round balls (suggested for the original mixture)

Place on a serving platter and shape accordingly to your taste. Can be placed on large lettuce leafs for added decoration.

*** Pumpkin - shape into pumpkin, score the ball in vertical lines to give full impression. Place cut (inhalf) pretzel rod in the center and place a large clean plastic leaf out of the center as well for that finishing touch. Large plastic leaves can be used under the pumpkin ball as well instead of lettuce leaves if you like.

*** Orange: shape into the shape of an orange, using the tip of a spoon to make little indentations all around for that textured look. Use a small clean plastic leaf and or stem or both for that finishing touch.

*** Pinecone: Shape into the shape of an pinecone, some visualize this shape as a rather large looking egg. Place the almond halves into the shape starting at the small end and working to the top (the larger end) first row then the second row around not exactly on top like a row but alternating effect: example :

kinda like roof tiles.

*** Round Balls: simply roll in the chopped nuts until the whole outside of the balls are coated fully.

Cover loosely, refrigerate until served. Serve with a variety of crackers laid in a circle around the cheese ball.



HONEY LIMEADE

Ingredients :

5 cups water
1 cup lime juice (juice from 4 to 5 limes)
2/3 cup sugar
2 tbs. honey
2 kiwi fruit, sliced

In a 2-quart pitcher combine water, lime juice, sugar, and honey. Stir to dissolve sugar. Serve over ice cubes. Garnish each glass with a slice of kiwi fruit. Serves 6.



Fruit Spears

Ingredients:

1 basket strawberries (cleaned and stems removed)
1 cup seedless grapes (washed )
2 apples (cored and sliced into 12 slices ea. apple)
3 kiwi fruits (each peeled and cut into 6 slices)
1 small can pineapple chunks
2 oranges (peeled and cleaned each wedge separated)
manichino cherries
1 package wooden skewers
lemon juice (I use a spray bottle not to waste extra juice)

Place the fruit on each stick alternating the fruit for flavor and color, topping the stick with a manichino cherry.

Stray the fruit spears with lemon juice and refrigerate before serving.

Tips for serving:

Can be served atop a lettuce leaf all by itself.
Sticks can be used as part of a center piece on the table sticking them out of a whole pineapple for that festive look.

Can be served along with a chocolate fondue for dipping.



Bacon Wraps

Ingredients:

1 lb bacon
1 can water chestnuts
12 medium size shrimp, or one of these other meats can be used: cooked chicken liver, cooked turkey cubes or cooked chicken cubes
toothpicks

Cut the bacon in half
wrap bacon around one shrimp and one water chestnut or one of the other meats.
Secure with a toothpick
Place on cookie sheet
Cook under the broiler until the bacon is crisp.
And Serve.



PEPPER POPPERS

Ingredients:

1 package (8 ounces) cream cheese, softened
1 cup (4 ounces) shredded sharp cheddar cheese
1 cup (4 ounces) shredded Monterey jack cheese
6 bacon strips, cooked and crumbled
1/4 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1 pound fresh jalapenos, halved lengthwise and seeded.

In a mixing bowl, combine cheeses, bacon and seasonings; mix well. spoon about 2 tablespoonfuls into each pepper half. roll in bread crumbs. place in a greased 15-in. x 10-in. x 1-in. baking pan. bake, uncovered at 300 degrees for 20 minutes for spicy flavor, 30 minutes for medium and 40 minutes for mild flavor. serve with sour cream, onion dip or ranch salad dressing,, makes about 2 dozen



Bacon Wrapped Scallops

Ingredients:

3/4 cup butter, melted
2 tbs. lemon juice
1 tsp. salt
1/8 tsp. pepper
1-1/2 lbs. large scallops
1 lb. bacon slices, halved

Partially cook bacon. combine butter, lemon juice, salt and pepper. add scallops and toss until well coated. wrap each scallop in bacon; secure with toothpick (2 scallops may be wrapped in one bacon slice). place in oiled grill basket and grill over medium fire, turning once, for about 10 minutes or until bacon is crisp..serves 8



Stuffed Mushrooms

Ingredients:

24 mushrooms, stems removed
tbs. butter
tsp. instant minced onion
3/4 cup sharp cheddar cheese, grated (may use Monterey jack or mozzarella cheese)
1/4 tsp. dried basil
1/3 cup bacon bits, cooked
1/3 cup bread crumbs
tbs. chopped parsley
heavy duty aluminum foil
1-2 tbs. sherry (optional)

Stuff mushrooms with mixture of remaining ingredients. cut 6 squares of aluminum foil. wrap 4 mushrooms in each square of heavy duty foil, seal, and place on grill over medium fire. grill 12-15 minutes. do not turn packets. yields 6 servings
