Mello Salad Burst

Serves: varies
Ingredients:
1 cup pineapple tidbits (drained)
1 cup flaked coconut
1 cup mandarian orange slices (drained)
1 cup miniature marshmellows
1 cup sour cream
1 cup chopped pecans or walnuts
1/4 cup sliced marashino cherries
Mix all ingredients together
Chill overnight and serve

Julie's Oatmeal Yummies

Serves: 4 dozen
Ingredients :
2 1/2 cups of oatmeal
1 cup flour
1 egg
1 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon of salt
1 teaspoon of cinnamon
3/4 cup of margarine or butter
1/2 teaspoon of baking soda
1/2 cup nuts (chopped walnuts recomended)
1/2 cup raisins
1/2 cup of chocolate chip morsels
Sift flour, cinnamon, salt and soda together and set aside.
Combine butter, sugar, egg and vanilla; beat throughly.
Stir in oats and flour mixture; mix well.
Add in nuts, raisins, chocolate chip morsels and mix well.
Drop by teaspoon on a greased cookie sheet.
Bake at 375* for 10-12 mins.

Rising Fruit Cobbler

Serves: 6 to 8
Ingredients :
1/2 cup margarine or butter
1 cup flour
1 cup sugar
1 teaspoon baking powder
1/2 cup milk
2 cups of fresh fruit or can subsitute canned
(recomends to use one of the following fruits for best results)
blackberries, peaches, apples, raspberries, cherries,or apricots. My favorite is cherry!
1 cup or less sugar (optional depending on taste and if using fresh or canned fruit.
Melt butter in 10 inch baking dish, set aside.
Mix in a bowl the flour, 1 cup sugar, baking powder.
Then add milk and mix throughly.
Spoon over the melted butter in the baking dish.
Heat in a small sauce pan over low heat the fresh or canned fruit and add the sugar depending on the taste, amount to be determined by you ( adjust accordingly.)
When well coated and mixed pour the fruit mixture over the dough.
Bake at 350* for 30 mins. or until the crust is golden.
Crust will rise.

Ingredients:
1 1/2 cups sugar ( Jeremiah 6:20)
3/4 cup butter (Genesi 18:8)
5 eggs, separated (Isaiah 10:14)
3 cups sifted flour (Leviticus 24:5)
3/4 teaspoon salt (II Kings 2 :20)
3/4 cup finely cut dried figs (Jeremiah 24:5)
3 teaspoon baking powder (Amos 4:5)
1 teaspoon cinnamon (Exodus 30:23)
1/4 teaspoon ground cloves (II Chronicles 9:9)
1/4 teaspoon all spice (II Chronicles 9:9)
1/4 teaspoon nutmeg (II Chronicles 9:9)
1/2 cup milk (Judges 4:19)
3/4 cup blanched almonds (Genesis 43:11)
3/4 cup raisins (II Samuel 16:1)
Cream butter with sugar. Beat in egg yolks one at a time. Sift together flour, salt, baking powder, cinnamon, cloves, allspice and nutmeg. Blend these dry ingredients into the creamed mixture adding milk slowly. Beat egg whites until stiff and fold in. Fold in chopped blanched almonds, figs, and raisins. Pour into a 10 inch tube pan, greased and dusted. Bake at 325 degrees for 1 hour and 10 minutes until cake is golden brown. Cool 10 minutes. Remove from pan and cool completely.

Chocolate Chip M&M Cookies

Ingredients:
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
2 sticks real butter
3/4 cup granulated sugar
3/4 +1 tsp brown sugar
1 tsp vanilla extract
2 eggs
12 ounces chocolate chips semi sweet
12 ounces m&m's
1/2 tsp nutmeg
1/3 cup molasses
Combine flour,baking soda and salt in small bowl.
Beat butter, granulated sugar, brown sugar and vanilla in large mixing bowl. Add eggs one at a time beating well after each addition, slowly add flour mixture. When mixed thouroughly add molasses. Mix in chocolate chips mixing thouroughly then add m&m's mixing completely. Sprinkle nutmeg on top of mixture and fold in to cookie dough.
Bake in a preheated 375* degree oven for 9-11 mins or untill golden brown. Remove from oven place cookies onto paper towels or wire racks to cool.

Jello Salad

Ingredients:
1 box lemon jello
1 box rasberry jello
1/2 lb marshmellows
1 3oz package cream cheese
1 sm cam crushed pineapple(well drained)
4 cups water
1/2 cup whipping cream
Disolve lemon jello
Pour lemon layer into 8 inch square pan.
Chill til firm.
Melt marshmallows, & cream cheese together.
Cool, fold in well drained crushed pineapple and add whipping cream and fold together.
Spread over lemon jello.
Chill.
Disolve rasberry jello pour over mixture and chill until firm.
Cut into squares and serve.

Molasses Cookies

Ingredients:
2 1/4 cups of flour
2 Tsp. baking powder
1 Tsp. baking soda
1/4 Tsp. salt
1 Tsp. Cimmamon
1Tsp. ginger
1/2 cup Nucoa
1/2 cup sugar
1 egg
1/2 cup molasses
1/2 cup water
Cream Nucoa, sugar, egg, and molasses.
Mix well. Add all the dry ingredients and spices adding a little bit of water at a time to blend together, until smooth.
Drop onto a greased cookie sheet 2" apart.
Bake at 375* for 10 mins.

Ozark Apple Pudding Munch

Ingredients:
2 eggs
1 1/2 cups sugar
2 1/2 cups chopped apples
1 1/2 cups of chopped walnuts
7 Tbs. flour
3 Tsp. baking powder
2 dashes of salt
Beat eggs and sugar together. Add in the apples and nuts.
Add the flour, baking powder, salt; mix well.
Pour into a large greased baking dish or two small ones.
Bake at 350* for 25 to 30 mins.
Serve warm with cool whip or ice cream.

Caramel Candy Turtles

Ingredients:
1 1/2 cups Pecan Halves
36 Caramels
3/4 semi-sweet chocolates, melted
Preheat oven to 325 degrees.
Grease a cookie sheet.
Arrange pecans halves, flat side down 4 in a like star position.
Place one caramel in the middle of each star arrangement.
Heat until caramels are soft, about 4-8 minutes.
Remove from oven.
With a butter coated spatula, flatten the caramel on top of the pecans.
Cool slightly.
Remove from pan place onto wax paper.
Drip melted chocolate on the top to complete the turtles.
Cool and eat for a nice treat.

APPLE STACK CAKE

6 large cooking apples diced
l 1/2 sticks of real butter
2 1/2 cups of sugar
4 oz. of cinnamon sugar
two Tbs. vanilla
l cup white karo syrup
In a large kettle bring butter sugar cinnamon vanilla and sugar and syrup to a boil stirring constantly, until mixture thickens add in diced apples and simmer till apples are mushy and then let mixture cool
take a package of vanilla cake mix and make 4 8 inch. round cakes (they will be thin)
Let cakes cool.
Take one cake and place it on a plate and cover with apple mixture repeat this till all three layer's are covered but don't cover the top yet, get a tub of cool whip and frost the out side of the cake and use a piping gun to form a ring around the top then cover the rest of the top with the remaining apple mixture and you have a Tennessee apples stack cake...
LEMON FLUFF PIE

Ingredients:
1 pkg. (3oz) lemon flavored gelatin
1 cup boiling water
1/2 cup cold water
8 oz lemon flavored yogurt
8 oz frozen whipped topping, thawed
1 ea. pre-formed graham cracker pie crust
Combine gelatin and boiling water, stirring until gelatin dissolves. Add cold water. Chill until the consistency of unbeaten egg white. Fold in yogurt and whipped topping; pour into graham cracker crust. Refrigerate until firm. Yield: one 9-inch pie.

Oatmeal Chocolate Nut Raisin Cookies

Ingredients:
1 cup butter
2 cups flour
1 tsp. soda
1 cup sugar
3 cups oatmeal
12oz. chocolate chips
1 cup brown sugar
1/2 tsp. salt
1 cup raisins
2 eggs
1 tsp. baking powder
1 tsp. vanilla
1 1/2 cups chopped walnuts nuts
1 tsp. orange juice
Cream the butter and both sugars. Add eggs, orange juice and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, raisins and nuts. Roll into balls and place two inches apart on a greased cookie sheet.
Bake for 10 minutes at 375 degrees. Makes about 65 cookies.

Old-fashioned Bread Pudding

Ingredients:
6 slices White bread remove crust
2 tbs. Margarine melted
1/2 cup sugar
1 tsp. Ground cinnamon
1/2 cup raisins
Vegetable cooking spray
4 Eggs
2 cups milk
1 tsp. Vanilla extract
Brush bread lightly with melted margarine; sprinkle with 1 tsp. sugar and cinnamon. Quarter each bread slice. Layer with raisins in a 1 1/2-quart casserole dish coated with cooking spray.
Set dish aside. Combine eggs, milk, vanilla, and remaining sugar; pour over bread and raisins in dish. Place dish in a pan containing 1 inch of hot water. Bake at 350 degrees for 55 minutes to 1 hour or until a knife inserted in center comes out clean. Server warm, or cover and refrigerate until thoroughly chilled.

Apricot Nut Balls

Ingredients:
1 cup dried apricots
1/2 cup broken walnuts
1/2 cup coconut
2 tbs. wheat germ
4 tbs. orange juice
1/3 cup finely chopped walnuts
Put apricots, the broken walnuts, and coconut into food grinder or processor.
Add wheat germ and orange juice; mix well. Form into 1 inch. balls.
Roll in the finely chopped nuts; refrigerate.
Makes 24 balls.

WHITE CHOCOLATE TRUFFLES

Ingredients:
1/2 lb white chocolate, coarsely chopped
1/3 cup butter
1 egg yolk from a very fresh egg
3/4 cup minced blanched almonds
Combine chocolate and butter in top of a double boiler; bring water to a
boil. Reduce heat to low; cook until chocolate melts. Remove from heat.
Add egg yolk and beat at medium speed of an electric mixer until fluffy
and cooled. Cover and let sit 12 to 24 hours in a cool, dry place (do not refrigerate). Shape mixture into 1-inch balls; roll in almonds. Cover and chill. Let stand at room temperature before serving. Serve truffles in miniature foil cups. Yield: 2 dozen.
Note: if mixture is too soft to shape into balls after standing, stir in 1 to 3 tbs. powdered sugar, one tablespoon at a time, to make desired consistency. Do not chill before shaping.

EASY AMBROSIA

Ingredients:
1 can (20oz) pineapple chunks, drained
1 can (11oz) mandarin oranges, drained
1 1/2 cups seedless green grapes
1 cup flaked coconut
1 cup miniature marshmallows
1/2 cup chopped pecans
1 tbs. sugar
3/4 cup vanilla yogurt
Combine all ingredients in a large bowl; serve immediately or chill several hours. Serves 8.
