Tzatziki

1 large cucumber, peeled and minced or grated and drained
2 cups plain yogurt (500 ml)
1 Tbsp. olive oil
3 garlic cloves, crushed through a press or 4 green onions, chopped salt and pepper
Makes about 4 servings
Combine all ingredients in a glass bowl. Mix well and refrigerate for at least 1 hour. Serve cold, as a dip. Goes with whatever you want. Try it with fried fish, or with fried eggplant or fried zucchini.
NOTE: To make an extra-thick sauce, use the richest yogurt available. Place in a cheesecloth-lined sieve over a bowl. Do not stir. Let the yogurt drain overnight at room temperature.
Horiatiki Salata (Greek Salad)

3 tomatoes, cut in wedges
1 cucumber, sliced
1 onion sliced
2 green peppers, cut in rings
6 Tbsp. olive oil
salt (pepper optional)
1/3 lb. feta cheese
2 dozen Greek black olives
oregano, dried or fresh
2 Tbsp. wine vinegar
or lemon juice (optional)
Place tomatoes, cucumber, onion and peppers in salad bowl. Shake together, olive oil, vinegar (optional), salt (and pepper if desired). Top with cubed feta cheese and the olives. Sprinkle with oregano.
Cheese Pie

The dough :
---------------
3 cups all purpose flour
1 cup warm water
2 tbl spoons oil
1/2 spoon oregano
dash of salt
mix ingredients; knead for about 2-3 minutes, adding flour until it
doesn't stick to the hands - separate into 3 equal parts
The filling (cheese pie):
--------------
a couple of chopped green shallots (can replace with 1/3 white onion)
1/3 cup finely chopped parsley
2 cups feta cheese , crumbled
1/3 cup freshly grated romano cheese
1/2 cup whole milk or better still, half & half
3 eggs
salt, pepper, thyme
beat eggs;
mix all other ingredients; heat in pot until cheese starts melting;
allow to cool to room temperature; then mix in eggs
Home made pies are the best snack for children. Try it in the evening, while reading a book or watching TV; Have a glass of milk along with it.
First we start with instructions for a cheese pie, then we go on to describe how to bake a delicious spinach pie!
The assembly :
--------------------
Roll out the 3 dough balls- so that each one is a bit bigger than your
baking pan (i use 8x12 in.)- the amount of dough, for that size will
give you the right thickness
Place the first layer on the greased pan, with ends hanging over the
pan rim - add half the filling.
Follow on with the second dough layer -add the rest of the filling.
Finish off with the last dough layer; fold the dough layers together
Pluck a few holes, making sure you go through the second layer of
dough
Bake for 3/4 hour at around 400F
Enjoy, by itself or with a simple tomato and cucumber salad
Spinach Pie

To make a spinach pie, follow the exact same instructions about the dough and the assembly.
For the filling of the spinach pie though do the following:
the filling (spinach pie):

about one pound of thawed frozen spinach- i prefer the chopped leaves kind
a couple of chopped green shallots (can replace with 1/3 white onion)
1/2 cup finely chopped parsley
1/3 pound feta cheese (totally optional i actually prefer it without)
salt, pepper, thyme
