SPICY CHICKEN
4 chicken portions, skinned
1 tbsp tomato puree
1 tsp cinnamon
1 tbsp lemon juice
1 tbsp worcestershire sauce
1 tbs soy sauce
2 tsp dried sage
pinch of tarragon
Mix sage, cinnamon, tomato puree, worcestershire sauce, soy sauce and lemon juice together and brush over chicken portions. Sprinkle on the tarragon. Leave for 1 hour to marinade in the fridge. Pre-heat oven to 160c or gas mark 3. Place chicken in baking dish and cook for approx. 35 - 40 mins. Serve hot with vegetables or cold with a salad. |
