| Golden Corn Chip Broccoli Casserole |
| 1 lb.pkg frozen broccoli, cuts 1 can cream of mushroom soup 1/4 cup light mayonnaise 1/4 cup shredded sharp Cheddar cheese 1 Tbsp. chopped pimento (optional) 1-1/2 tsp. lemon juice 1/4 cup water 1/3 cup crushed corn chips Combine soup, mayonnaise, cheese, pimento, lemon juice, and water. Pour over broccoli. Top with crushed corn chips. Bake at 350* for 35 minutes. ********************************************************************* |
| Canned Meat Casserole |
| 1 can canned luncheon meat, diced 1 lb. or more elbow macaroni, cooked 1 small onion, diced 1 cup shredded cheese, cheddar, 1 can cream of mushroom soup. (note: if you double the recipe, add 1 can of Cream of Chicken soup.) 1 cup milk salt, pepper celery salt, oregano lemon pepper 1 tsp. worchestershire sauce, no more. Mix ingredients and place in 2 qt. casserole dish. Top with 3/4 cup buttered crumbs. Bake at 375* for 1 hour or you may also prepare on top of stove in a large pan for a quicker meal that takes about 30-45 minutes to prepare. Add the buttered crumbs when ready to serve. ******************************************************************* |
| Hamburger Pot Pie |
2 lb. ground beef, 1 pkg. dry onion soup 2 cans tomato soup 4 cans cut green beans, drained 1/2 tsp. oregano 1/2 tsp. garlic powder Pepper to taste Brown ground beef, drain add onion soup. stir and add tomato soup and seasonings. Place the green beans in the crust, cover with meat mixture. Put top crust on, place slits in crust. Seal edges. POT PIE CRUST --------------------------- 4 cups flour 1 cup shortening 1 tsp. onion salt 1/4 tsp. garlic salt water about 1/2 cup or so amounts vary with the humidity Cut shortening into flour with fork. Add seasonings, Sprinkle water on a little at a time, until it begins to form a ball. Cut off about 2/3's and roll out place in a 9X13 baking pan. Roll out the remainder for the top. Bake about 45 minutes until browned at 425* ****************************************************************** |
| Nacho Salad |
| 1 head of lettuce, cut into small pieces 1 lb. ground beef, browned, drained 1/2 pkg. dry onion soup 1 can refried beans 1 or 2 onions, diced 1 container of salsa, mild, med or hot 1 cup shredded cheddar cheese celery salt pepper or lemon pepper garlic salt Place cut up lettuce in 9X13 pan or 8X11 dish. Brown ground beef, drain, add dry onion soup, seasonings & refried beans. Spread meat mixture over top of lettuce. Spread Salsa over meat. Spread diced onions over top of salsa. Spread shredded cheese over onions. Serve. Note, may use fresh, diced tomatoes but need to add some salsa for seasoning. |
