| Chocolate Sheet Cake |
2 Cups sugar
2 C. flour (mix and hold til later)
1 st. oleo
4 Tbs. cocoa
1/2 C. oil
1 C.water (bring these 4 ingredients to a boil, remove from heat)
2 eggs, beaten
1/2 C. buttermilk + 1 tsp. baking soda
(mix and add to liquid)
1 tsp. vanilla
Add dry ingredients. Mix well.
Bake in greased and floured 9 X 13 baking pan for 20 min. at 350*
CHOCOLATE SHEET CAKE ICING
1 st. oleo
2 Tbs. cocoa
6 T. milk
Bring to boil. Remove from heat.
Gradually add,
1 lb. pdr. sugar
1 tsp. vanilla
1 c. chopped nuts, walnuts preferred.
Spread warm on warm cake.

| White Texas Sheet Cake |
1/2 C. shortening
2 C. sugar
2 egg whites
1 3/4 C. flour
1 tsp. baking soda
1/2 tsp. salt
1 3/4 C. buttermilk
1 tsp. vanilla, white is best
Cream shortening, sugar.
Add unbeaten egg whites.
Mix together flour, baking soda, salt.
Add to creamed mixture alternating with
buttermilk & flavoring.
Pour into greased & floured 17 X 11" cookie sheet.
Bake for 350* for 20 min.
Ice when cooled.
WHITE SHEET CAKE ICING
1 st. oleo
1 1/2 C. coconut
1 lb. powdered sugar
1 tsp. vanilla
1/3 C. buttermilk
1 1/2 C. chopped pecans
Melt oleo, add rest of ingredients.
Mix well and spread on cake.

| Red Velvet Sheet Cake |
1/2 C. shortening
1 1/2 C. sugar
2 eggs
2 Tbs. cocoa
2 oz. red food coloring
1 tsp. salt
2 1/2 C. flour
1 1/4 - 1 1/2 C. buttermilk
2 tsp. vanilla
1 tsp. baking soda
1 Tbs. vinegar
Cream shortening, sugar til fluffy add eggs and beat 1 min.
Stir food coloring & cocoa in cup to make paste then add to mixture.
Add salt. Mix buttermilk and vanilla.
Sift flour twice.
Add to creamed mixture alternately with buttermilk;mix well.
Mix together soda & vinegar in cup. Add to other ingred.
Bake in two 8" greased and floured pans or 9x13 pan at 350* for only 25 - 30 min.
Or bake in cookie sheet pan. 11x17 for brownie size pieces.
ICING FOR RED VELVET CAKE
7 1/2 Tbs. flour
1 1/2 C. milk
Mix together flour and milk, cook, stirring constantly, until thick: cool in refrigerator. Beat again before adding.
Cream together:
1 1/2 C. butter not margarine
1 1/2 C. powdered sugar
1 1/2 tsp. vanilla
Beat with mixer til fluffy and
add flour mixture a little at a time.
It will be like whipped cream.
Spread over cooled cake.
Be sure to add a bit of salt to take away the sweetness.
