| NOODLE SOUP |
2 qt. water, boiling
1 C. meat stock, (broth-meat)
1 med. onion, chopped
1 carrot, chopped or 1 can sliced
1 stalk celery, sliced thin or chopped
Bring all this to a boil then turn down to simmer.
Simmer while making noodles:
3 eggs, beaten
1/2 C. water
1/2 tsp. salt
1 - 1 1/2 C. flour
Mix til all ingredients form ball. Add a bit of flour and turn out onto floured board and roll thin, 1/4" thick.
cut in 1" wide widths and stack then slice very thin pieces.
Drop slowly into boiling soup. Let simmer for about 10-15 min. or more. May add a bit of flour to thicken if desired.
I add some Oregano, seasoned salt, Garlic salt- powder, Italian seasoning then if you want it hotter, add some crushed chili's when in your bowl.
We like it very well. Very tasty!

| TURKEY & RICE SOUP |
Bring to boil:
2 qt. water
1 pkg. dry onion soup
1 can sliced carrots
1 can sliced, stewed tomatoes (can use cut up tomatoes)
1 cup or so of leftover turkey, deboned , (can use ground turkey that has been cooked.)
3 Cups of dry rice, about
Bring to boil then simmer until rice is done. You may serve then. If you let it set the rice will absorb all the liquid and you will have to add more.
Add some spices, such as Oregano, Seasoned Salt, Garlic Powder, Lemon Pepper and don't forget the crushed chilies for your own bowl.

| VEGETABLE SOUP |
2 Qt. water
4-6 potatoes, peeled and cubed
1-2 carrots, scraped and sliced
1-2 stalks of celery, sliced or diced
1 medium onion, chopped
1 can cut green beans
1 46oz can tomato juice
2 cans mixed vegetables
1 can peas
1 can kidney beans, or Pinto beans or northern beans
Add enough water to make the amount like you like it.
Simmer for 20 min. or so.
Add Seasonings:
Onion Salt
Garlic Salt
Seasoning salt
Lemon Pepper
Pepper
Oregano
Italian Seasoning
Parsley flakes
1 Tablespoon of sugar if desired.
Crushed Chilies on your bowl.
