I am now in the process of entering all of my recipes under sub-headings, and intend to have this completed by mid-August. You can check the subtitles to see if any interest you, and a complete list of recipes is included below. If you have one in mind, but note that a subheading isn't yet available for the type of food (ie casserole recipe with no casserole subheading) feel free to e-mail me with the name of the recipe and I will send it to you via return e-mail. And if anyone has any tasty recipes, please forward it to me for addition to this site.

Now, for a tip on baked goods...
I highly recommend White Lily Flour http://whitelily.com over any other type I've tried for soft, fluffy pastries and cakes. The winter wheat used in this flour is excellent. I also encourage you to check out the spices offered through Penzey's at http://penzeys.com Their catalogue has a lot of scrumptious recipes as well as great value on hard to find spices. I am in no way affiliated with either company.

Here are a few of my recipes to give you an idea of what may be offered...

SPINACH SALAD
Toss together 1 bunch fresh, washed and torn spinach, five slices diced Swiss or white American cheese, 1 large grated carrot, 4 slices cooked crumbled bacon and two sliced hard boiled eggs. Chill well. Mix packet of Good Seasons Italian Dressing. Use 1/4 C dressing and partial can French Fried Onions just before serving.

FROZEN STRAWBERRY SALAD
8 oz soft cream cheese
3 Tbs honey
2 C fresh crushed strawberries
1 C crushed drained pineapple
whipped cream optional

Blend cheese and honey. Stir in fruits. Pour into ice cube trays and freeze two hours. Cut into squares and serve on lettuce leaf. May garnish with whipped cream. Serves four.

SKINNY NANCY'S CUCUMBER SALSA
Place in blender: one small peeled onion, eight cloves garlic, two jalapeno peppers (seeds and stems removed) one bell pepper (de-seeded and stemmed), one stalk celery, handful fresh cilantro (seeds to grow cilantro found in gardening shops and easily grown), one tablespoon
tamari OR soy sauce and 1/2 teaspoon cumin OR adobo seasoning. Blend well. Add three medium cukes and pulse blend until chunky. Great on tacos or with chips.


This recipe is easily adapted to what ever is on hand (ie tomato instead of celery, hot banana pepper instead of jalapeno)


ZUCCHINI BREAD
1 Cup Cooking Oil
3 Eggs Beaten
2 Teas. Vanilla
3 Cups Flour
1 Cup Brown Sugar
1 Cup White Sugar
1 Teas. Soda
1 Teas. Baking Powder
1 Teas. Salt
1 Tables. Cinnamon*
1/2 Teas. Pumpkin Pie Spice*
1/2 Cup Chopped Nuts
2 Cups Grated Zucchini

*Can substitute 1 Tables. Chinese Five Spice for cinnamon and pumpkin spice

Directions:
Grease and flour two loaf pans. Mix oil and eggs. Beat in sugars and vanilla. Combine dry ingredients. Blend into oil, egg and sugar mixture a little at a time. Stir in zucchini and nuts (or raisins or dates). Mix well. Bake at 350* for approximately one hour.

Serves:
Makes two loaves.

ANGEL BISCUITS
1 pkg dry yeast
2 Tbs warm water
2 1/2 C plain flour (White Lily is best)
1/2 teas baking soda
1 1/2 teas baking powder
1 teas salt
2 Tbs sugar
1/2 C shortening
1 C buttermilk (or 1 C milk + 1 teas vinegar)

Dissolve yeast in warm water and set aside. Mix dry ingredients then cut in shortening. Stir in the buttermilk and the water/yeast mixture. Blend thoroughly. Chill dough minimum two hours or overnight. Turn dough onto well floured surface. Do NOT Kneed. Dough will be very soft, work in only enough flour to make handling possible. Cut into biscuits (press cutter straight down, do not twist). Bake on greased baking sheet at 400 degrees until lightly browned. May freeze by placing baking sheet into freezer then transferring into freezer bag when set. Cook from frozen state as directed.


CHEESE-EGG-ZUCCHINI CASSEROLE
4 medium sliced zucchini
2 small onion
2 Tbs Vegetable oil
8 oz can chopped green chili
6 tomato peeled and chopped
1/4 teas salt
6 beaten eggs
8 oz (2 C)grated Jack cheese

Cook zuch in small amount of water 5 minutes. Drain and set aside. Saute onion in oil, stir in tomato, chilies and salt. Layer 1/2 each of zuch mixture, egg and cheese in casserole dish. Repeat layers. Bake 350 25 minutes or until done. Serves 6

GRANDMAMA BELL'S EVANSVILLE BBQ SAUCE
1/2 C catsup
1/2 C wine vinegar
1 C water
1 tsp chili powder
1 tsp allspice
brown sugar to taste

Heat and serve or use to baste

DEBBIE ROSSOW'S GRILLED DOVE
12 - 24 dove breasts (with or without breast plate)
1 - 2 pounds bacon thin sliced
2 - 4 green peppers
2 - 4 red peppers
1 - 3 banana peppers
2 - 4 jalapeno peppers
1 - 3 cayenne peppers
(all peppers are fresh from garden)
1 onion
2 - 3 garlic cloves
ground pepper to taste.

Clean dove breasts thoroughly under running cold water, place in bowl of salted water and let stand for 15 - 20 minutes. Then remove from bowl and place in ziplock bag with black pepper sprinkled on them. Put in the refrig over night or while you are preparing the peppers.

In a food processor mince up all peppers, onion and garlic together, add ground black pepper to taste. Let stand for 15 minutes. When ready to prepare for grill, prepare shallow baking pan large enough to hold all breasts on skewers. Spray pan with PAM so that they will not stick while cooking. Place each dove breast meat side down on 2
strips of crisscross bacon, put a teaspoon full of minced peppers in the center and wrap in the bacon strips then place on skewer. When all dove breasts are wrapped and skewered, place on preheated bar-b-que rack 8 -10 inches from coals. Cook approximately 45 - 60 minutes. When done the bacon should be crispy.

BILL B.'S KEY LIME PIE
1 can sweetened condensed milk
4 egg yolks (save whites in bowl)
4 oz lime juice

Combine milk and egg yolk, blend on low speed. Slowly add juice and mix well. Pour in prepared graham cracker crust and refrigerate over night.

Set out egg whites to room temp. Add 1/8 teas cream of tartar beating on high until stiff. Slowly add 1/4 C sugar beating until very stiff. Pour on key lime and bake under hot oven till brown on peaks. Chill again.
