STUFFED GREEN PEPPERS

1 - 1 1/2 lbs hamburger
1 C bread crumbs
1/4 C grated sharp cheddar cheese
1 Tbs Parmesan cheese
1 egg
milk
tomato sauce
parsley, salt and pepper

Fry hamburger, add to rest of ingredients. Add a little milk. Stuff peppers. Brown in oven and pour tomato sauce and basil on top. Bake at 350 about 1 hour



CHEESE-EGG-ZUCCHINI CASSEROLE

4 medium sliced zucchini
2 small onion
2 Tbs Vegetable oil
8 oz can chopped green chili
6 tomato peeled and chopped
1/4 teas salt
6 beaten eggs
8 oz (2 C)grated Jack cheese

Cook zuch in small amount of water 5 minutes. Drain and set aside. Saute onion in oil, stir in tomato, chilies and salt. Layer 1/2 each of zuch mixture, egg and cheese in casserole dish. Repeat layers. Bake 350 25 minutes or until done. Serves 6




EGGPLANT PARMESAN

Peel and slice 1/4" thick 1 eggplant. Soak in salt water 1/2 hour. Mix 1 C flour, 1 Tbs lemon pepper and dash onion salt. Flour eggplant slices and fry in olive oil. Layer in casserole dish: Spaghetti sauce,
eggplant, grated mozzarella cheese and sprinkle Parmesan ending with cheeses. Bake uncovered at 350 30 minutes.



QUICHE
Pie Crust:
3/4 C whole wheat flour
1/4 C wheat germ
5 Tbs. butter
/21 teas salt
cold water to moist consistency
Bake at 400 7 minutes.

3/4 lb Gruyere Cheese (or Swiss)
2 C milk
1/4 lb cooked crumbled bacon
4-5 eggs
1/2 teas salt
pinch nutmeg

Sprinkle cheese on crust than bacon crumbs. Pour mixture of all other ingredients (blended) on cheese. Slice three vegetables and place on top. Spinach and salad onions work well. Cook at 350 for 1/2 to 3/4 hour.
