When Julia achieved stardom with the hit film "Mystic Pizza" in 1988, she looked as though
she'd had a few too many slices herself. Today, she's 20 pounds lighter. Yet unlike many
celebrities who refuse to eat any carbohydrates or are deathly afraid of sugar, Julia eats
healthy, balanced meals. Se even allows herself some real indulgences; the Southern gal from Smyrna, Georgia, still loves biscuits, gravy, and grits. "I could eat a little all day long," she has said. "That's my perfect day."
Rather than deny herself favorite foods, Julia has melted off the pounds by working out. She started with step aerobics classes at a gym near he home in lower Manhattan. These days,Julia varies her routine with yoga sessions (though of the latter, she has said, "I don't want it to change my life, just my butt"). She loves to run outdoors - chasing after her seven dogs on her New Mexico ranch, or jogging in New York City. When she hits the pavement, it is without a bodyguard in tow, regardless of the fans who sometimes stop and gawk. Indeed, Julia has no problem sweating it out with regular folk. One morning she attended a 9:00 a.m. step class at her neighborhood gym - hair pulled back into a messy ponytail, and wearing simple blue leggings, a sports bra, and not a stitch of makeup. "Not until I made a little joke and she laughed did I realize it was Julia Roberts," the instructor says. "There was no glamour, no attitude. She just looks like any other girl."

While Julia Roberts may not care much about the way she looks in public, she does care about what she eats - most of the time. She tries to maintain a healthy diet by mostly eating salads, vegetables and grilled fish. That is, unless she falls victim to her big weakness - breakfast food. The thin 5-foot-8 star can easily devour a good ol' fashioned Southern morning food spread that includes biscuits, gravy,eggs, bacon and sausage.
Pancakes can tempt her. So can Haagen-Dazs ice cream, Twinkies, crab cakes and toast with grits.
These are not your natural health foods, and the one-time, small town girl has learned to avoid them most of the time or to eat them in quantities small enough so they don't pack on the pounds. But that's easier said than done. "I cook all the time," claims the actress. "I make a hell of a lasagna, if I do say so myself." And she loves to eat! "I'm not one of those idiot girls who takes two bites and goes, 'Ugh, I just can't eat another thing! I'm like a cow. I could eat a little all day long. That's my perfect day."
The 32-year old actress has learned to balance her eating habits with plenty of exercise - whether she's romping about on her spread in New Mexico or at home in her apartment on New York's Gramercy Park, where she spends 60 percent of her time. When she's just hanging out at home in the Southwest, she burns up those calories racing her horse Cadillac around plastic barrels.
Down on the ranch, she also works out in a heated indoor pool and on the outdoor tennis court with boyfriend Benjamin Bratt. She also loves to dance and has installed a dance floor out on the edge of a big field. She and Bratt sometimes carry a boom box out so they can dance and work out under the big Southwestern sky. Sometimes they don't even need the boom box to get up the spirit to move. "Dancing is very therapeutic for her and she really loses herself and gets into it," Milo Levell, her L.A. trainer reveals. "We jump around and shout. It's a release."
Back in New York City, Roberts keeps her body toned by working out to exercise tapes at home, weight training in the gym and jogging. She's logged a lot o trainer time at one of Manhattan's trendier gyms, La Palestra with Pat Mannocchia, her one-time boyfriend who happens to own the exercise club.
Out on location, Julia stays in shape by trucking along her exercise bike and works out in her trailer while waiting for her scenes. She loves to jog and can do her body sculpting - calisthenics with weights - anywhere she travels. She also practices, yoga, which she did not take up for spiritual reasons. "I don't want it to change my life," Julia said. "Just my butt."
Julia tries to maintain a healthy diet and loves seafood dishes such as the grilled salmon and green beans dish above.
