Fire-monsters (or the things Luna mentioned that Fudge had)- These are the creatures Fudge may use to invade the rest of Europe. The French and others will be battling these things to the end. They are about to lose when Dumbledore comes to their aids!

Owls (including Hedwig)- Owls will be essential for wizards communicating between wizards. Thousands may be shot down so communicating may be made even more dangerous than before. Hedwig may help Harry throughout and, if he does, I don't think he would ever faulter... They may stop using owls halfway through the 7th book because it becomes too dangerous.

Cats- Cats may become a very important part of the books, when communicating by owls is made too dangerous. Wizards and Witches may start using cats for sending messages! Crookshanks may help out too.

Unicorn- Most Wizards and Witches will not hurt something so pure as a Unicorn, so Dumbledore will probably often sends them first out into battle with his most prized fighters riding on their backs.

Ghouls- No clue in book terms. But I think the Ghouls will probably flea to the safe place where they came from. When Voltemort's regime trys to invade, none if his army that invaded live. Because if a ghoul can make as much nnoise as Fred and George alone, think of how much damage a bunch them could do! God have mercy...

Gnomes- Gnomes make holes in the ground where they live. AND they only make them in a Wizard or Witch's house. This may let Voltemort tell if a Magical person lives in a house or not!

Phoenixes- Fawkes will help Harry many times to come. I will assure you... We'll probably learn more phoenix lore too! THE INFERNO HAS JUST BEGUN!! HAHAHA!!!

Veela- They'd be probably be pretty good at suducing... And turning on their attracted prey and then ripping them to little bloody pieces of flesh and gore!!! The scene would be unbarably gorey and often quite hilarious. If I could see their bashful faces turn to crimson! Not from their shyness, but from their own BLOOD!!!! Sorry 'bout that, BUT THE DEATH!!!! the suffering-
Anyways, they'll probably side with the Bulgarions, and who knows if their good or not, eh?

Leprechauns- These chaps will probably be on the good guys side cus their damn hilarious, man!!!!!!!!!! But really Irish folk are pretty good people, ain't they? And the little green chaps wear buckled shoes, and hell those would be dangerous...

Werewolves- I was thinking that it may be possible that Voltemort may invent a special whistle to control these wolves. Like one of them dog whistle things that only dogs can hear you know? Only it'd be deadly! Cause u'd be the head of a bunch chomping jaws of a werewolf army! But seriously, even if Voltemort used a different method like possibly even propaganda, who knows if they could be used for good or ill... But if my psychic ability is right, I think they'll be used by evil to raid small villages, etc., etc. This'll create a general fear of werewolves by both magicfolk and non-magic folk (aka muggles, but u knew that).

Hippogriffs- The hippogriffs will ride on the side of Dumbledore! And Buckweak will return for his revenge! Hopefully a revenge on MacNair! (And sorry for all the exclamation marks!)

Ogres- See Shrek...
Seriously, I don't think Ogres even exist in JKR's world but who knows... They could be used for awwww... espionage... individual warfare... defenders... princess rescue...
Who knows, one of them could even have a talking donkey for a sidekick, but who would think of that besides me?

Zombies- The Undead! They walk again! Voltemort may be able to use them at some point. (I don't remember where, but I do know she mentioned a zombie somewhere in 1 or 2 or 3 or 4 or 5.)

Vampires- The Undead! They walk again! Wait, I've already said this... Anyway, who knows what they may be good for? (Even though Snape is most likely a vampire.)

Hags- They could be persecuted like in the 1400s in Europe and 1600s in America. Sounds likely, because if the muggles find out magic IS real they may go insane with shock. On another topic, hags may work for Dumbledore or Voltemort... At this point in the series though, we don't know if they will even be mentioned again.

Redcaps- You of course know that redcaps love to haunt places where blood has been shed. These demons will probably become very very very common indeed...

Kappas- These guys are water demons from Japanese lore. They may be used to protect something important in the water. What could it be?

The Weasley's Car- It'll have to show-up sometime again right?

Other Possible Creature Wishes and Maybes:

Cyclopses- Who knows, maybe if Harry takes some sort of long journey, JKR might take a note out of Homer's book and use one of these guys.

Circe or Morgana- I know these two ain't creatures, but who knows, they could show up and help the war on either side.

Sirens- Same as cyclops, maybe, huh?

Other Demons- Will this go biblical like The Chronicles of Narnia?

The Grim- could it show up for real?

Chimera- A life and death battle for a main character maybe?

Sphinx- Will the riddles continue?

Talking Animals- possibly like Chronicles of Narnia? (which happened to be an inspiration for JKR, by the way)

Griffin- who needs hippogriffs...

Nymph- Who knows, anything's possible. Could it be like Calypso from the Odyssey (except without...you know)

Pan-ish man with goatlike horns and legs- Pan was the trainer of Hercules, could he train Harry as well even though he was killed by his own student (gulp).

Cupid- A joke! A joke...

Cuchlulain-ish ugly warrior- Cuchlulain was an irish folklore. He was hansome usually, but in battle he became a monster. One of his eyes disappeared into his head, the other bulged. Also his heels turned to the front; and his jaws opened wide enough to swallow an enemie's head. Could a man like this ever exist in Harry Potter?

Serpents- I know I said snakes already, but I think there important enough to mention again right?

Crocodiles- who knows, they're deadly buggers though...
