SPECIAL SAUCE
Since this Sauce is used in the following meals the quantity if designed to make 4 quarts of the sauce. Store the sauce in a Tupperware or glass container for future use.
1 Gallon of Distilled Water
Do not use Spring water etc. Must be DISTILLED water this way you will know that the water is pure and does not have any additives.
Pour into Large Pot. Set heat on Medium to low.
3 Large cans of tomato paste. = Add to above water .
1 Tbsp. of Garlic Juice, or 2 Tbsp. Garlic Powder, or 4 Cloves of Garlic Diced = add to mix.
2 Tbsp. Of Oregano. = add to mix.
1 Tbsp. Basil = add to mix
1 large Onion Diced = add to mix.
12 ounces of Mushrooms chopped. = Add to mix. If you like them allot, add 24 ounces.
1 Medium Size Green pepper chopped. = Add to mix.
8 ounces of pitted black olives chopped = add to mix.
1/4 Cup of Ketchup = add to mix
2 cups of whole milk = add to mix.
12 ounces of stewed tomatoes = add to mix.
2 Tbsp. Lemon and Pepper seasoning = add to mix.
12 ounces of shredded Mozzarella cheese = add to mix.
Salt will be made available to family or guests when served.
Cook above sauce for one half hour at a medium temperature. Stir every five minuets.
Leave on Stove and let cool for about one hour. Place into quart containers and refrigerate.
ABOVE SAUCE SHOULD BE MADE AT LEAST ONE DAY IN ADVANCE.
MILK USED WILL TURN THE SAUCE A LIGHT BROWN IN COLOR.
Allowing for the sauce to sit for 24 hours or more will allow for an increase of the sauce flavor. Sauce must remain refrigerated when not in use.
For those who cant take the time for making the above sauce I have a cheaters recipe:
One Quart size jar of STORE BOUGHT Spaghetti Sauce:
Pour contents into Medium Pot: In Jar ( Before cleaning it) add the following:
1 Tbsp. Ketchup, 1/2 cup of milk, 4 ounces of shredded Mozzarella cheese. Add 1 cup distilled water, put lid back on jar, shake jar with contents ( Helps get remaining paste out of jar ), pour into pot. Cook on Medium for 20 minuets.
Add any other items or spices to your taste.
Milk is used to reduce the acid reflux, from the tomato sauce mix. See recipes below for this sauce use.
# 1 Spaghetti
In my travels around the world, I have found many discrepancies as to different ways to prepare, serve, and who actually invented the dish. Not wanting to step on toes, and have meat cleavers thrown at me, from irate Chefs, I will give you what was told to me.
The true way to prepare and serve Spaghetti: ( According to Belay's Restaurant of Rome, Italy. A five star rating)
1 1/2 to 2 pounds Top Round Beef: ( Cut into 1 inch cubes. ) Cook in slightly greased pan until the meat is cooked to your taste.
( Add a pinch of Garlic to the cubes while cooking. Garlic is a natural tenderizer. )
While meat is cooking Heat Sauce in separate pot on Medium to high heat.. Stir occasionally When sauce starts to boil, turn down to low.
While meat is cooking Start boiling Pasta. Add a pinch of salt to help increase water temperature, and tenderize the pasta faster. When cooked, Drain and blanch pasta.
Serve Pasta, Meat and Sauce in separate containers. Let guests or family take how much they want.
Meatballs was invented during the depression years. Cost of meat became to costly so the ground beef was made to look like meat cubes and served.
Quick meal. Replace Top Round Beef with Lean ground beef. Do not make meat balls. It is an insult to ones palate, and you have to break them up to eat them. In some cases they can be used in a game of baseball. Cook the beef into small pieces till golden brown. Drain off any grease. Add above sauce to Beef. Serve beef and sauce in one container and the Pasta in another.
The quick meal sauce and meat can be used on toast and cheese as a sandwich , or add to your scrambled eggs in the morning for a tasty delight.
Some meats can be used as substitute: Turkey, Deer, Pork. However, Notify those who are eating that you have made a substitute in meats: When using Turkey or Pork do not add a pinch of Garlic, substitute with Thyme and Basil.
Suggestion for serving Pasta: In bowl, ( That Pasta is served in.) add 1/4 cup of water in bottom of bowl. Microwave the bowl and water for 60 seconds. Put blanched pasta into bowl, cover with Saran Wrap. Will keep pasta warm for the entire meal. Note: Make sure that Bowl is Microwave safe.
In cooking salt should be added by the person who is eating. Reduced Sodium intake.
# 2 Deep Dish Meal: ( Original Pizza from Italy = The flat version is a U.S. invention.)
To reduce the time element in preparation of the meal, use pre-made pie crusts.
Make your pie crust and place it into a deep 8 inch pie dish ( 2 inch or better deep.)
In separate Pot Cook 2 cups of Small Shell pasta. Drain and Blanch.
In separate pot cook 1 1/2 pound of Hamburger, Drain grease.
12 ounces of Pepperoni:
1st. Layer: Place on bottom of the crust in a circular patter until bottom is filled.
Pasta Shells
2nd. Layer: Place Pasta on top of Pepperoni in a single layer.
Sauce:
3rd. Layer. Cover the pepperoni and pasta . Layer.
32 ounce Shredded Mozzarella Cheese:
4th Layer. A single layer to cover the sauce.
Cooked Hamburger
5th Layer. Cover the mozzarella cheese
Pasta
6th Layer. A single layer over the Hamburger.
Sauce:
7th Layer. Cover the hamburger and pasta.
Mozzarella Cheese:
8th Layer: Cover the Sauce.
Repeat Layers 1 through 8 till near the edge of the pie pan top. Last layer is mozzarella cheese.
Place in preheated oven 375 degrees for 30 minuets, or till top cheese turns a slight brown in color. DO NOT BURN THE CHEESE.
Cut and serve into small bowls. Use a spatula to serve.
Note: You can substitute small deep aluminum bowl and use pie crusts in them and add ingredients, above, in smaller quantity. Cook on Cookie tray. Several at a time.
Individual deep dish meals. However, you must make your own pie crust.
# 3 QUICK MEALS FOR THOSE ON THE GO!
Not only will these meals please the fussiest families, they taste great, easy to make and hamburger helper has nothing on them.
1 1/2 to 2 pounds of Hamburger
( Brown and drain grease.) medium size pot.
(# 3A.)12 ounces of Green Beans or/and
12 ounces of Peas or/and
12 ounces of Peas and Carrots
Sauce: 1/2 quart:
Add any one or combination of vegetables thereof into pot with Hamburger.
Cook for 20 minuets on medium to high heat or Microwave for 4 minuets.
Serve warm.
(# 3B) 12 ounces of whole Corn or/and
12 ounces of sliced Potatoes ( Equivalent to three large potatoes.)
Sauce 1/2 quart
Add any one or combination of the above vegetables into pot with Hamburger.
However cooking time will increase to 30 minuets on medium to high heat or Microwave for 6 minuets. Serve warm. You can also add vegetables from 3A above but add when the cooking time is there. ( Cooking on stove. )
# 4 Taco Filler
2 Large cans of Pork & beans
1 quart Sauce.
2 lbs. of Lean ground Beef or Hamburger, or substitute with turkey burger.
1 Large Onion ( Diced in a bowl )
12 ounces of shredded Mozzarella Cheese ( In Bowl mixed with American )
12 ounces of shredded American Cheese ( In Bowl mixed with Mozzarella )
2 Large Tomatoes ( diced up in Bowl )
1/2 head of lettuce ( ripped into dice sizes in Bowl )
1 small Jalapeno and / or 2 Tbs. of hot sauce ( Optional only add to taste)
2 packages of soft flower Tortillas. ( can heat in Microwave for about 20 seconds.)
Strainer: To strain Grease from Hamburger, not needed if using turkey burger.
Large Pot
Cooking:
Slight Browning of hamburger to release grease. Strain and return to Pot.
Real lean Hamburger or Turkey Burger just cook in pot without straining.
Add Porork & Beans, Sauce, and ( Optional Spices ).
Cook at a medium heat stirring often for about 20 min.. Sauce should be a light brown in color. Add Mozzarella cheese. Cook for 15 more min. at a low to medium heat Stirring often. Set to simmer for 5 mins.
Serving:
Heat Tortillas first. Open flat on dish. From the Bowls add lettuce, tomato, Cheese, and onion on top of tortilla. Then scoop out Sauce from pot, and cover over the lettuce, etc.. Fold over slowly, and enjoy.
Left Over Ideas: Served on bread as a spicy sloppy Joe sandwich. Add to your eggs to make a spicy egg omelet. Can also be used on top of Pasta.
