Spinach/Fruit Salad - Yield 3 servings
For those who like there spinach crisp in a salad; for another meal cook the remaining spinach as a vegetable.
1/2 of 10 oz. bag of fresh spinach
1/2 of 19 oz. can of peaches
2 tbsp. French dressing
Preperation and serving
1. Sort, wash, drain, and dry spinach well in a cloth or salad spinner. Tear into small pieces.
2. Chop drained peaches into fine pieces (the size of raisins)
3. Toss spinach, fruit and dressing together lightly.
4. Chill 30 minutes before serving.
