Evelyn's Tuna - Broccoli Casserole
4 eggs
1 cup buttermilk
2 cans (6 ½ or 7 ounces each) Tuna in vegetable oil
½ teaspoon salt
1 pound (2 cups) Small- curd creamed cottage cheese
2 packages (10 ounces each) frozen chopped broccoli, thawed, well drained
½ cup chopped onions
1 medium tomato, thinly slice, or 1 cup sliced cherry tomatoes
½ cup (4 ounces) shredded mozzarella cheese

Beat eggs and buttermilk in a large bowl. Add tuna, salt, cottage cheese, broccoli, and onions.

Turn into large shallow casserole. Bake in 350 degree oven for 35 minutes. Top with sliced tomatoes and mozzarella cheese; bake 10 minutes, until set, yield 8-10 servings.

Evelyn's Scalloped Potatoes

4 Medium potatoes Yukon Gold (or the potatoes of your choice) Approx.2 lbs
1 large onion very thinly slice
3 Tbsp all purpose flour
1 tsp salt
freshly ground black pepper
1 cup grated cheddar cheese (Approx. 1/4 lb)
1 cup cream of mushroom soup mix with 1 cup of water and stir until smooth
2 tbsp unsalted butter or margarine

Peel potatoes slice crosswise 1/4 inch slices, wash and pat dry
In a large bowl, toss potatoes, onion, flour, salt and pepper until evenly distributed.

Spread half of potato mixture into 2-litre greased baking dish; cover with half the cheese. Repeat layers. Place butter or marg on top. Pour in the mixture until it reaches the top. Cover with foil and bake in preheated oven 350 degree for 1 hour remove foil, and bake 45 minutes or until potatoes are tender and cheese begin to brown, serve according to individuals.

Fried fish (by Evelyn Browne)

clean fish and pat dry
season with your choice seasoning
let stand for about 1 hour
ingredients: flour eggs salt cooking oil ,paprika white peper,and season of your choice

to fry: mix 2 eggs in a bowl setaside
mix some flour according to the amount of fish
add some white peper paprika to the flour
coat the fish in the flour and dip in egg mixture
place the fish in the hot oil until brown on one side
then turn to the other side until golden brown
then set aside on a line plate serve on a bed of tomatoes and cucumbers.
