At the screen after the movie sequence, press Up, Triangle, Down, X, Left, L1, Right, R1. You should here a ding sound and then another movie sequence will appear, showing the other 5 characters. The screen that comes up after that will say "Ultimate Battle 27" and will look different from the previous screen. Now, you will be able to choose from 5 new fighters.
NOTE:This does not have to be done quickly.
