Recipe Number 1.

CHICKEN WITH ONION AND TOMATOES RECIPE


2 chickens, broilers, cut in halves


8 tomatoes, sliced


6 onions, peeled, sliced low fat seasonings to taste



In one frying pan fry the chicken in fat until nicely brown
on both sides. This generally requires 20 minutes. In the meantime,
in another frying pan brown nicely the onions in fat. Then add
the tomatoes and seasonings to the onions and let cook for about
5 minutes together. Put chickens on a platter, and pour over them
the tomato and onion mixture. Serve.

Recipe Number 2.

CORN BREAD RECIPE

1 1/2 cups cornmeal


1 cup flour


5 teaspoons baking powder


3 tablespoons sugar


2 cups milk


1 teaspoon salt


2 eggs


3 tablespoons shortening, melted



Mix and sift together flour, sugar, salt and baking powder.
Mix in the cornmeal. Add the milk, the shortening and the
well beaten eggs. Beat well. Pour into well greased pan and
bake in hot oven for about 25 minutes.

Recipe Number 3.

APPLE AND ENGLISH WALNUT SALAD RECIPE

Two cupfuls of sliced apple, two cupfuls of sliced English walnuts,
mayonnaise dressing, lettuce.

Mix the apple and walnuts together. Arrange in a salad bowl with lettuce
leaves, and cover with the mayonnaise dressing.

Recipe Number 4.

CARAMEL JELLY RECIPE

1 tablespoonful of granulated gelatine
1/3 cup of boiling water
2 cups of thin cream
1/4 cup of cold water
1/4 cup of sugar
1/3 cup of sugar cooked to caramel
1/4 teaspoonful of salt

Soak the gelatine in the cold water. Cook the caramel and
boiling water to a thick syrup; add the softened gelatine,
the sugar, salt and cream and stir until the sugar is dissolved,
then strain into molds.

Recipe Number 5. .

PEACH PRESERVE RECIPE

1 1/2 pounds peaches, peeled, pitted, cut in halves


1 1/2 cups water


2 cups sugar





Boil the water and sugar until the syrup coats a spoon.
Add the peaches and boil slowly and gently until the
peaches are clear. By that time the syrup will be thick.
Place peaches in sterilized jars, pour over them the
boiling syrup,and seal. Put covers on the jars and
adjust the clamps. Do not wipe the syrup from
the tops or rubber rings before sealing. Bacteria
may be introduced by wiping.




Place the sealed jars back in the wash boiler, cover with hot water to
6 to 8 inches above the tops of the jars, bring to boiling point and
let boil for 20 minutes for pint size jars and 30 minutes for quart
size jars. The jars must be filled full.

Mexican Roll Ups. 6 uncoocked lasagna noodles 3/4 cup prepared guacamole 3/4 cup chunky slasa 3/4 cup (3 ounce) shredded fat-free chedder cheese Additional salsa ( optional ) 1.Cook lasagna noodles according to package directions,omitting salt. Rinse with cool water ; drain.Cool. 2. Spread 2 tablespoons guacamole into each noodle; top each with 2 tablespoon salsa and 2 tablespoons cheese. 3. Roll up noodles jelly fashion. Cut each roll-up in half form two equal-size roll ups. Serve immediately with salsa or cover with plastic wrap and refrigerate up to 3 hours. Marinated Flank Stake with Pineapple 1 can (15 1/4 ounce) DEL MONTE sliced pineapple (or cheaper brand) 1/4 cup teriyaki sauce 2 tablespoons honey 1 pound flank stake ------------------------ 1. Drain pineapple,reserving 2 tablespoons juice.Set aside pineapple for later use. 2. Combine reserved juice,teriyaki sauce and honey in shallow 2 quart dish; mix well. Add meat turn to coat.Cover and refrigerate at least 30 minutes or over night. 3. Remove meat from marinade, reserve.Grill meat over hot coals ( or broil) brushing occasionally with reserved marinade.Cook about four minutes on each side for rare,about 5 minutes on each side for medium,or about 6 minutes on each side for well done. During last 5 minutes of cooking,brush pineapple slices with marinade; grill until heated through. 4. Slice meat across grain; serve with pineappleGarnish,if desired. Makes 4 servings Note: Marinade that has come into contact with raw meat must be discarded or broiled for several minutes before serving with cooked food. Prep and Marinade Time: 35 minutes. Recipe Number 9.

DIABETIC RECIPES:

PINEAPPLE SALAD

1 pound cottage cheese
1 envelope unflavored gelatine or diabetic gelatin
1 package diabetic whipped cream
1 can crushed pineapple (no sugar syrup)
1/2 cup pineapple juice
1 teaspoon liquid sweetener

Combine cottage cheese, pineapple and sweetener. Heat pineapple
juice and gelatin until hot. Let cool.

Combine gelatin mixture with cottage cheese mixture. Fold in whipped
cream. Chill at least 2 hours.

Makes 8 to 10 servings.

CHERRY S'MORES

1/2 cup Marshmallow Crème
1/2 cup dried, tart cherries
1/4 cup semisweet chocolate morsels
12 (1 1/2-inch square) graham crackers

In a small bowl, combine Marshmallow Crème, cherries and chocolate morsels;
mix well.

Place 6 of the graham crackers on a microwave-safe plate. Spoon a heaping
tablespoon of marshmallow mixture on each cracker. Top with remaining
crackers. Microwave, uncovered, on HIGH (100% power), for 30 to 45
seconds or until marshmallow mixture is soft and warm.

NOTE: To prepare in conventional oven, place 6 of the graham crackers
in an ovenproof baking dish. Proceed as above and bake in a preheated
350 degrees F oven for 2 to 3 minutes or until marshmallow mixture is
soft and warm. Makes 6 servings.

Per Serving: 99 Cal; 4 gm Total Fat;17 gm Carb; 00 mg Chol; 85 mg Sod

Diabetic Exchange: 1 1/2 Bread/Starch; 1 Fat

Feeds 8 people, (left overs as well & a- A+ from Everyone). :)

(Ingrediences)

Kidney Beans: 3- 15 oz cans.
Caned Tomatoes: 3-15 oz cans.
1 large onion
2 green bell peppers
2 red bell peppers
2 teaspoons of chilli powder
1/2 cup of brown sugar
4 pounds ground beef
-------------------------

(Next): Drain juice from Kidney beans, add in a pot,
then open the canned tomatoes and crush the tomatoes
into the tomatoe juice,
add the brown sugar, cut up
the onion and peppers,
add into the pot, chilli powder
as well,after ground meat is cooked,
drain well and add to
the pot, let it cook for about 30 minutes and serve.


Its a good idea to make Just a bit extra, for the neighbor
that will soon be knockin on your door talking about the [ aroma ],
that is floating down the street. :)

Recipe Number 12.

GM's - Quick 1 Cores Meal.

Ingreadience:

2 boxes of - Shelled Macaroni & Cheese

2 Zucchini-

1 package Sausage

Directions:

Cook Sausage,drain well.

Slice & Steam Zucchini-

Cook Macaroni & Cheese.

When the Macaroni & Cheese is done, add-Cheese Sause,
Sausage, Steamed Zucchini & Mix Well.

This dish will keep for a few days, it serves 4 to 6 people.

Breakfast: Apple Cider Pancakes

INGREDIENTS:
2 cups complete pancake mix
1 1/4 cups apple cider
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon brown sugar
1/2 teaspoon vanilla extract
1/4 cup chopped walnuts (optional)
butter flavored cooking spray



DIRECTIONS:
Place pancake mix into a medium bowl, and stir in apple cider. Apple cider may be adjusted to achieve the desired thickness. Stir in cinnamon, nutmeg, brown sugar and vanilla. Mix in walnuts if using.
Heat a large skillet over medium heat, and spray with cooking spray. Use about 1/4 cup of batter per pancake. Cook 3 to 4 pancakes at a time. Turn over when bubbles appear in the center, and cook until golden on the other side. Serve immediately with pats of butter and maple syrup.

Lunch:Egg Salad

INGREDIENTS:
8 eggs
1 tablespoon mayonnaise
2 tablespoons prepared Dijon-style mustard
1 teaspoon dried dill weed
1 teaspoon paprika
1/2 red onion, minced
salt and pepper to taste

DIRECTIONS:
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
Serve on bread as a sandwich or over crisp lettuce as a salad.

Dinner:Fresh Herb Dinner Rolls.
INGREDIENTS:
1 (.25 ounce) package active dry yeast
1 tablespoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
1 cup milk, room temperature
2 eggs
2 teaspoons salt
2 tablespoons butter, softened
1/4 cup chopped fresh parsley
1/4 cup chopped fresh chives
6 cups bread flour
1 egg white
2 tablespoons water

DIRECTIONS:
In a small mixing bowl, dissolve yeast and sugar in 1 cup warm water. Let stand until creamy; about 10 minutes.
In a large bowl, stir together the yeast mixture with milk, eggs, salt, butter, parsley, chives, and 4 cups flour. Add the remaining flour, 1/2 cup at a time, until dough has pulled together. Turn dough out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth and put in a warm place to rise until doubled in volume, about 1 hour.
Grease two 9x13 inch baking pans. Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 24 pieces. Shape each piece into a round ball, and place into the prepared pans. Cover the rolls with a warm, damp cloth, and let rise until doubled in volume, about 40 minutes.
Preheat oven to 350 degrees F (175 degrees C). In a small bowl, lightly beat the egg white with 2 tablespoons of water; brush egg wash over tops of rolls.
Bake in preheated oven for about 30 minutes, or until golden brown.

Desert: Cornmeal Muffins and Jelly Corn Muffins Recipe

1 cup cornmeal
1 cup flour
1/2 teaspoon salt
4 teaspoons baking powder
1 cup milk
1 egg
2 tablespoons shortening

Mix and sift the cornmeal, flour, salt and baking powder. Add the milk gradually, then the well-beaten egg, and melted fat. Bake in a well-greased muffin pans in a hot oven (400-425 degrees F.).

Jelly Corn Muffins

Use the receipt for cornmeal muffins. Fill greased muffin tins one-fourth full, put a teaspoon of jelly on the top of the batter in each cup, cover the jelly with more batter and bake in a hot oven (400-425 degrees F.) Fifteen or twenty minutes.

Cookie Time!



First off, get a nice cold glass of Water, Tap would do, But I'd suggest SPRING Water.

Plenty of Water: will give you a better chance of NOT getting flues, "etc."



Water Does cleans the system out and helps you get along better health wise.
I was drinking diet pop for a while, and felt just (Blahhhh).... Then I switched to Water,it was a little bit of getting use to, but I felt about 95% better then I did before.

I know a few people that are Diabetic and Even they said:

This is also a good way of losing weight, and lowering your sugar level to the point where one doesn't have to take shots. Which that is GOOD

Diabetci Recipes:
BreakFast:TEA LATTE

8 English Breakfast tea bags
4 C. water
2 Tbls. almond syrup (Orgeat syrup, found in liquor stores or bar supplies section of supermarket)
whole milk
1 ground nutmeg or chocolate, for garnish (optional)
______________________________________________________________________________________

Prepare a strong tea with 8 English Breakfast tea bags in 4 C. boiling water. Steep for 5 minutes; gently squeeze tea bags and remove. Pour 1/2 C. plus 2 Tbls. of hot tea into each tea C.. Add 1 tsp. of almond syrup and stir. Steam whole milk with the steamer of an espresso machine. Add 1 Tbls. steamed milk and top with foamed milk. Garnish with ground nutmeg or chocolate, if desired.

Lunch: Diabetic Friendly Cornbread Salad.

INGREDIENTS:
1 (7.5 ounce) package corn muffin mix
6 cups torn romaine lettuce
1 cup seeded, chopped tomato
1 cup chopped green pepper
3/4 cup chopped purple onion
3 slices turkey bacon, cooked and crumbled
2/3 cup fat-free Ranch-style dressing

DIRECTIONS:
Prepare muffin mix according to package directions in an 8-inch square pan, using water instead of milk. Cool in pan 10 minutes. Remove cornbread from pan; cut into cubes.
Place cornbread cubes on a baking sheet; bake at 400 degrees for 10 minutes or until crisp and lightly browned. Place half of cornbread cubes in a large bowl; reserve remaining cornbread cubes for another use.
Combine toasted cornbread cubes, lettuce, and next 4 ingredients; toss well. Pour dressing over salad, and toss well.
Serve immediately.

Diabetic Dinner:Pork Chops with Apples, Onions, and Sweet Potatoes.
INGREDIENTS:
4 pork chops
salt and pepper to taste
2 onions, sliced into rings
2 sweet potatoes, sliced
2 apples - peeled, cored, and sliced into rings
3 tablespoons brown sugar
2 teaspoons freshly ground black pepper
1 teaspoon salt

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
Season pork chops with salt and pepper to taste, and arrange in a medium oven safe skillet. Top pork chops with onions, sweet potatoes, and apples. Sprinkle with brown sugar. Season with 2 teaspoons pepper and 1 teaspoon salt.
Cover, and bake 1 hour in the preheated oven, until sweet potatoes are tender and pork chops have reached an internal temperature of 160 degrees F (70 degrees C).

Cookies:Cookies-and-Milk Bars

Cookie-based snack bars are often laden with sugar. This homemade version uses chocolate graham crackers--less sweet, but still kid pleasing--and sneaks in low-fat granola and nuts for a more wholesome snack. You can also add dried fruit bits or wheat germ for bonus healthiness

Cookies-and-Milk Bars
1. Heat the oven to 350° F.

2. Coat an 8- by 8-inch baking pan with cooking spray.

3. In a medium-size bowl, combine the graham crackers, granola, white chocolate chips, and walnuts or pecans and mix well. Drizzle the condensed milk over the top and stir until well blended.
4. Using a piece of waxed paper, press the mixture firmly into the prepared pan. Bake for 20 to 25 minutes or until just golden and set. Cool completely. Cut into 10 snack bars.

BreakFast: GM's Recipe: Bananna Pancakes.

3 big ripe banannas.
2 cups of pancake mix.
1 cup of water.

Smush banannas and drop into bowl of pancake mix.
Stir until banannas are mixed well in the batter.

Then fry them just like you do pancakes.

(When done)

Then your choice of syrups,jams Or preserves.

This is a WINNER! (Children LOVE it!) 10 STARS-**********.

Lunch:

Tingly Fruit Salad

Mixed with fresh mint leaves, this berry and melon combination is easy for kids to love. Prepare it a few hours ahead of time and it will develop a light, sweet syrup.
Ingredients


1 pt. raspberries
1 pt. blueberries
1 small honeydew melon
1 small cantaloupe
2 tsp. sugar
1/2 cup fresh mint leaves (optional)

Directions


Rinse the raspberries and blueberries, and allow time for them to dry thoroughly. Seed and cube both melons.

In a stainless steel or glass bowl, toss together the berries, melon and sugar. (Of course, you can add or substitute other fruits, but keep in mind that fruits like bananas, pears and apples oxidize quickly and will discolor.) Cover and refrigerate for 3 hours.

Right before serving, wash the mint leaves and use scissors to snip them into small pieces. Toss in with the fruit. Serves 8.

Dinner:Fried Chicken that Beats the Bucket.

Nothing smells better in the kitchen than chicken frying Southern way.


Buttermilk pulls double duty in this recipe, providing flavor and tenderizing the chicken. Although the recipe traditionally calls for lard, shortening is a fine substitute. Serves 4 to 6.

1. Rinse the chicken pieces and blot them with paper towels. In a large bowl combine the buttermilk, 1/4 teaspoon of black pepper and the salt, and stir to combine.

2. Add the chicken pieces and turn to coat evenly. Cover and refrigerate for at least 2 hours or overnight, turning the pieces occasionally.
3. Combine the flour, seasoned salt and the remaining 3/4 teaspoon of black pepper in a shallow baking dish and blend well. Line a baking sheet with three layers of paper towels and place it near the stove.

4. Put the lard and butter in a large cast-iron frying pan or pot big enough to hold the chicken pieces in one layer without touching. Melt over medium-high heat. The fat should be about 1/2-inch deep.

5. Heat until it registers 365 degrees on a candy thermometer or until a small cube of bread dropped in the oil browns in about 1 minute.

6. Using tongs, remove the thighs from the marinade, draining well. Dredge them in the flour mixture, turning to coat evenly. Shake off any excess flour. Place them skin-side down in the center of the pan.

7. Coat the remaining pieces in the same way and add them to the pan in a single layer without touching. Work in batches if necessary.

8. Don't move the chicken for about 5 minutes or until the coating is set and looks firm. Check the underside by lifting with the tongs--it should be deep golden. Cook the pieces between 8 and 20 minutes (depending on size), turning them periodically until crispy brown and cooked through.

9. To test, cut into the thickest part of a piece. The juices should run clear and the meat should be opaque throughout. Place on the paper-lined baking sheet to drain.

10. Arrange the chicken pieces on a platter and serve hot, room temperature or cold.
